DC Deejay 🇨🇦🇪🇺🇺🇦<p>A poll, inspired by my wonderful sister-in-law, whose English-Canadian family <a href="https://mastodon.online/tags/dessert" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>dessert</span></a> traditions include apple pie served with cheese.</p><p>For the record, I think apple pie should always be served to love ones or complete strangers with ice cream (I pair it with French Vanilla, but do not judge).</p><p>Please share widely for the most reliable results.</p>
taxet<p>Since it’s Easter, it’s time to address THAT thing in the Finnish cuisine. I’m of course talking about mämmi.</p><p>It looks like it might be chocolate, but it’s not. It’s not really all that sweet. Some say it looks like… well, you know. Like it’s been eaten once before already. But if you can get over it, you might just find something that will become your favorite Easter dessert.</p><p>Essentially it’s a rye pudding, either with added sugar or sweetened by a specific process that I really don’t know the English term for. I prefer the latter since it’s not as sweet. Then you can (and honestly should) add either cream or vanilla sauce. I prefer vanilla sauce because to me plain cream is a bit icky.</p><p>But it’s also very high in fiber since it’s got rye flour and rye malts. So I would recommend that if you find yourself in a situation where you’re offered this suspicious, sticky, dark brown substance I recommend giving it a try. JD<p>Pre-COVID, I baked a pie almost every week for a little over a year. It was a very fun project, I learned so much about my favorite dessert, refined techniques, experienced new pies (Dried Apple Pie was probably my favorite forgotten pie). It was all documented on a site named “Year of Pie.” It was lost to SquareSpace, though.</p><p>But thanks to a post from <span class="h-card" translate="no"><a href="https://mstdn.ca/@toddtyrtle" class="u-url mention" rel="nofollow noopener noreferrer" target="_blank">@<span>toddtyrtle</span></a></span>, I discovered that static site generators had become a thing. With the help of the Way Back Machine, I was able to grab an 90% complete version of the old text. And all the old photos have been on a hard drive, because why toss pics of pie?</p><p>So, it’s rough. There are major missing pieces. There are obvious layout issues. Old posts are being added every few days, but happy enough to put it out there.</p><p>Edit: American sweet pies, not English savory pies. Ron Franke<p>More on dessert experiments.</p><p>To keep one’s sanity amid the Trump/GOP chaos and corruption, one has to do small and enjoyable things.</p><p>To this end, I continued my experiment with the old English dessert called Syllabub. As a reminder it was originally a confection made with cream and sweet white wine.</p><p>On this 4th experiment I used fresh squeezed Cara Cara orange juice along with the heavy whipping cream and sugar, all whipped together for about 5 minutes with a hand blender.</p><p>So far, I’ve experimented with Sauvignon Blank, Meyer Lemons, Limes, and now Cara Cara oranges.
